Sustainability in the food and restaurant industry requires a strategic approach. Your sales won’t magically grow, you must be the driving force behind them. As a restaurant owner or operator, you must identify what’s working and build on it. You must also identify innovative new ways to grow your business.

Below are actionable and easy-to-implement revenue generation tactics for cafés, juice bars, and supermarkets.

Everyone must eat, which makes the food industry a multi-trillion-dollar global industry! Let’s explore a few different metrics that relate to your fast-casual food business.

What is an example of revenue generation in food service?

Your revenue refers to how much you sell. It’s not a calculation of your profit margins or your net or gross profits.

This includes sales generated from:

  • Juice
  • Snacks
  • Food

When monitoring your sales growth, break things down by the metrics below. Analyzing these metrics will help you build your revenue growth management (RGM) action plan.

  • If you have multiple locations, calculate your average sale per store—broken down by each year in business.

#1 Strategic Pricing

Your menu items must always be priced for profitability. That said, there are some pricing strategies that can boost your revenue.

  • Most juice bars opt for full-dollar prices ($5) or .25-cent intervals for their juices.
  • Menu items .95 cents or .99 cents subconsciously translate to “discount” pricing. This strategy is best for bundles.
  • If you offer different beverage sizes, your larger juices should always cost at least a bit less per ounce.
  • Offer tiered pricing, charging less for single-fruit or vegetable juices than you do for multi-produce combinations. Also, charge more for functional juices.

#2 Create New Menu Offerings

As a juice bar or fast-casual food service business, it’s important to have a core menu your regulars can rely on. However, it’s also important to introduce a steady stream or alternating stream of menu offerings.

  • Offer options inspired by the local weather. For example, beyond orange juice for vitamin C, offer a winter immunity juice blend.
  • Offer holiday-inspired juices, foods, and snacks. Maybe a juice or snack with cranberries in November and December.
  • Take advantage of the lower cost of seasonal fruits and vegetables, by creating limited-time menu offerings.
  • Test a new juice or two at least once per quarter and be sure to market it on your social media.

#3 Upsells, Bundles, and Merchandise

Getting new customers through the door and returning customers through the door more often is always a priority. However, you must not lose sight of the opportunity to increase your ticket average. Explore ways of generating more sales to who is already walking through the door.

  • Upsell wellness shots: This includes wheatgrass, matcha shots, energy shots, vitamin-infused shots, protein shots, and more.
  • Offer superfood add-ins: Stir in or quickly pulse in a blender to add Macca, bee pollen, spirulina, collagen, vitamins, coconut water, and other superfoods.
  • Customize: Add additional fruit or veggies for a flat rate. This increases the liquid volume, so be sure to factor the larger beverage container into your pricing.
  • Sell beverage containers: Create collectible and reusable hot/cold beverage cups. Customers will like the sustainability and the fun seasonal designs.
  • Sell merchandise: This includes beverage containers, tote bags, juice recipe books, t-shirts, reusable straws, and more.

#4 Convenient Healthy Meals

Offering convenience doubles as a method of generating revenue! Consumers are increasingly on the go. They don’t have the time to wait in long lines and prefer a range of on-demand delivery options. So, provide at least one option that makes it faster and easier to order from you.

  • Create a proprietary app customers can use to order and pay remotely. Then they can pick up their order without waiting in line.
  • List yourself with your local food, grocery, and on-demand delivery apps such as Uber Eats and DoorDash. On-demand delivery partners charge service fees, so feel free to charge higher pricing. Yes, consumers are willing to pay more for on-demand delivery!
  • Offer catering. This can be as simple as delivery of prescheduled orders of 10 or more menu items. You could also charge more for delivery and serving.

#5 Sample

Sampling’s not dead! Juice is extremely easy and cost-effective to sample. Simply order 2-ounce cups to pour and share. Sample everything from your best-sellers to new menu items and everything in between. Think beyond today, as sampling is an excellent way to introduce new juices, snacks, and food items to your customers.

  • Create a daily or weekly sample calendar and track how much the sale for each juice sells while it’s being sampled.
  • If you juiced a bit too much, give the extra ounce or two as a sample to the next customer in line.
  • If it’s permitted locally, sample in front of your restaurant or at the nearest corner.
  • Have produce that’s near their expiration date? Sample it! You’ll boost sales of the menu item you’re sampling, and avoid (or minimize) your food waste.

#6 Gift Cards and Loyalty Programs

Gift cards are a fast and easy method of generating revenue. They’re the ideal gift for health-conscious friends, family, and colleagues. So, if you aren’t yet, begin selling gift cards. This includes physical cards, QR codes, and other electronic remittance options.

Regulars like to feel special, so reward them with a loyalty program. Maybe after the 10th juice the 11th juice is free. Or every time they load their app or gift card with $25, they get a free juice or snack.
