Masticating Juicer vs. Cold Press: Which One Gets the Best Results?

Cold Press Tips
28 junio 2024

Trying to determine which type of automated juicer is right for your juice business? Deciding between a masticating juicer vs cold press is an excellent starting point. However, they’re the same thing!

Masticating juicers are also referred to as slow juicers or cold presses. So, what you need to determine is if you need a centrifugal juicer, cold press, or a citrus juicer. You may require more than one type of juicer to create a unique juice experience.

Is a cold press or masticating juicer better?

Masticating juicers are cold presses. So, what you need to determine is if you require a multi-fruit juicer or a citrus juicer. Both cold presses and centrifugal juicers are multi-fruit juicers. They can juice citrus fruits, but not with the efficiency of a dedicated citrus juicer.

At a quick glance:

  • If you’ll be making juices to order, a centrifugal juicer might be the better fit.
  • If you’ll be making pre-bottled juices, a cold press might be the better fit.
  • If you only want to juice orange and citrus juice, a citrus juicer is all you need.
  • If you want to juice OJ and all fruits and veggies, you’ll need two types of juicers.

What is the difference between a masticating juicer and a centrifugal juicer?

Zumex offers both masticating and centrifugal juicers. Our technology is innovative and designed to meet the needs of high-volume juicing. That said, you must determine which type of juicer meets your unique business needs.

Masticating (cold press) juicer

Cold presses crush and press fruits and vegetables, extracting every last drop of juice within. Crushing and pressing generate less heat than centrifugal juicers. With less heat, there is less oxidation. With less oxidation, there is less separation when bottled. Less oxidation also means that the nutrient value is retained longer.

With a cold press, nutrient value slowly dissipates post-juicing. So even though the shelf life is the same regardless of the juicing method, masticating cold press juicers retain the enzymes, vitamins, and minerals longer.

What are the disadvantages of a masticating juicer?

Some masticating juicers generate a lot of pulp. However, Zumex has resolved the high-pulp issue with the Zumex Mastery hydraulic cold press juicer. Our innovative technology includes a built-in filtering mesh. This ensures the smoothness of a centrifuge juice, with the nutrients of a masticated juice.

Don’t let the name “slow juicer” fool you. Our commercial cold press is fast!

Now let’s dive into the benefits of a cold press vs centrifugal.

Centrifugal juicers

Zumex’s multi-fruit centrifugal juicer has an internal metal basket that spins at a high speed and a titanium shredding disk that maximizes sharpness to grind fruit with speed and ease. It extracts juice from both fruits and veggies. If juicing citrus, you must peel them first. The bit of heat generated while spinning and grinding accelerates oxidation. This causes juice to foam slightly and separate if not consumed shortly after juicing. Many believe it may degrade some of the enzymes and nutrients or degrade them faster than a cold press.

Centrifugal juicers are ideal if juice is made one at a time to order. Since customers are likely to drink made-to-order juices without delay, separation and oxidation are typically of less concern.

What are the disadvantages of centrifugal juicers?

Although designed for fast and easy high-volume juicing, if you pre-juice most of your juice, this juicing method is more time-consuming. Faster than the average juicer, but still more time-consuming than a Zumex cold press.

What is a citrus juicer?

If you only want to sell orange juice, there’s no need to explore the difference between a masticating juicer vs cold press vs centrifuge. All you need is a citrus juicer!

Juicing citrus without a citrus juicer

A cold press can press citrus fruits, without peeling or slicing. However, large fruits such as watermelon and pineapple need to be cut in half, but they don’t need to be peeled. Citrus fruits need to be peeled when using a centrifugal juicer.

Juicing citrus with a citrus juicer

Citrus juicers peel and juice all citrus fruits faster than a cold press or centrifuge. They can juice oranges, lemons, limes, tangerines, grapefruit, and most other citrus fruits—but not pineapple. Since orange juice is the most popular juice in the world, OJ is a potentially lucrative addition to your restaurant menu.

If juice is a primary menu category, or the core of your menu, you may want both a citrus juicer and a cold press or centrifuge juicer.

Do you get more juice from a masticating juicer?

Production capacity is a key determining factor when deciding between a centrifugal juicer vs a masticating cold press. Whether you get more juice per fruit or veggie depends heavily on which automated juicer you select. With some brands, you can get up to an ounce or so more of juice with a cold press. Even Zumex juicers deliver varying yields. We can talk you through the yield for each of our juicers.

Expect to spend up to 10% less on produce when you choose a Zumex juicer
for your restaurant or juice business.
